Description

This coastal Pinot Noir is grown on west-facing slopes with sandy loam soil typical of Tapihue. With a high exposure to the evening sun but at the same time receives cool breezes from the Pacific Ocean, giving it character and elegance. The final blends were made in concrete eggs and old French oak barrels. It presents notes of utillas, herbs, cassis and rose petals. Round, vibrant, with little tannin and easy to drink.

TASTING NOTE

The palate is round, vibrant, with few tannins and easy to drink. The whole-cluster fermentation gives it a more complex texture that makes this Pinot Noir unique in our portfolio.

PAIRING

It is recommended to pair with dishes with a spicy touch, such as crispy duck pie, pulled pork or braised salmon. Lively acidity works well with creamy pastas and risottos. Seared octopus, caper tartar, red onion and chives, fava bean puree with mint and green olive aioli. Burrata, prosciutto San Daniele and pesto. Walnut pate, pickled eggplant and strawberry jam. Marinated cherry tomato, roasted garlic, olive oil and basil.
