Characteristic wine of our vineyard, awarded on several occasions at national and international level. An elegant and gastronomic white wine.

The grapes come from a block planted in 1993 - the oldest in the vineyard - and the soils are composed of black clay. The wine is harvested by hand and goes directly to the press with the whole cluster. Only the purest must is used for fermentation. It is aged for 6 months in steel and barrels on its fine lees. Frequent battonage amplifies the sensation of volume that the wine shows on the palate.

PAIRING

Lean red meats in raw preparations such as beef carpaccio with capers and arugula. Fatty fish in dry cooking such as grilled salmon with broad bean and oyster salad, red onion, green chili and cilantro.

Ideally between 4 and 6ºC

GUARD

Enjoy now or store in a dark place horizontally for up to 10 years after harvest.

TASTING NOTES

Deep straw yellow in color, the nose is dominated by citrus fruits such as grapefruit and lime, notes of ginger and tomato leaves, and white pepper. On the palate, a wine with more body and volume than the common Sauvignon Blanc, given by the unique terroir of our vineyard that gives it this particular character, high acidity and a long, saline finish. The great volume in the mouth and the surprising texture culminate in a long, clean finish.
