Casablanca Valley

This coastal Pinot Noir is grown on west-facing slopes with sandy loam soil typical of Tapihue. With a high exposure to the evening sun but at the same time receives the breezes from the Pacific Ocean, giving it character and elegance. The final blends were made in concrete eggs and old French oak barrels.

It presents notes of strawberries, herbs, cassis and rose petals. Round, vibrant, with little tannin and easy to drink.

PAIRING

It is recommended to be served with food with a touch of spice, such as crispy duck pancakes, pulled pork or seared salmon. The bright acidity works well with rich, creamy pasta dishes and risottos. Seared octopus, caper tartar, red onion and chives, fava bean puree with mint and green olive aioli.Burrata, prosciutto San Daniele and pesto. Walnut pate, pickled eggplant and strawberry jam. Marinated cherry tomato, roasted garlic, olive oil and basil.

TASTING NOTES

The palate is round, vibrant, with low tannins and an easy drinkability. The whole bunch fermentation imparts a more complex texture that makes this Pinot Noir unique amongst our portfolio.
